Vinagre inglés

El mundo de las bodegas está repleto de misterios. Un aura casi sagrada emana de la semioscuridad de una bodega cuyas bóvedas guardan el secreto del milagro que sólo puede aportar el tiempo, rindiendo homenaje a la labor y al conocimiento del hombre cuando transforma un buen vino en una añada excepcional.

Es un oficio muy bonito. Trabajas duro durante todo un año, preparando la viña, talándola durante el frío invierno, quitándole toda hoja podrida en la primavera y rompiéndote la espalda durante la gran fiesta de la vendimia. Luego vienen todas esas meticulosas labores de bodega cuando la varita mágica del buen enólogo se muestra capaz de convertir la carne de la uva en oro líquido. Y luego a esperar. Esperar año tras año hasta que el vino llegue a su madurez y entonces… ¡qué maravilla! O no. Puede que cuando llegue este gran momento esperado con tanta ilusión tu vino se haya convertido en vinagre.

Lamentablemente, esto es precisamente lo que ocurre cuando intentas embotellar y embodegar tu inglés. Aunque lo trabajes muy duro durante el frío de todo un invierno, aunque lo estudies con afán durante la dulce primavera, aunque creas que todas tus atenciones durante el calor del verano son suficientes, si lo cosechas demasiado pronto y lo dejas tal cual, "envejeciendo" en la bodega de tu cabeza, cuando lo abras será puro vinagre inglés.

Si quieres que tu inglés se convierta en un gran reserva, dedícale tiempo, constancia y controla su evolución igual que lo haría un gran sumiller.
